Fresh Hatch Red Chile

You are placing a pre-order for Fresh Hatch Red Chile. We will begin shipping when harvest begins. Red Chile typically begins shipping in late September or early October.

Every pod we ship is from the current year's crop, picked the same week it goes in your box. The best time to order is now, before harvest — pre-orders ship in the order we receive them, and the 25 lb. size in particular tends to sell out before the season ends. Once we're done harvesting and selling fresh in late October, we move to frozen, roasted, and red chile sauce for the rest of the year.

Fresh Hatch Red Chile is available in a medium heat level and shipped right to your door. Our chile is picked and shipped the same day so that it gets to you as fresh as possible. From our farms to your table, a piece of the Land of Enchantment.

Big Jim and Charger are two of our most famous varieties and a favorite for red chile. The hearty pods are perfect for making your own red sauce or roasting and freezing.
